Pantry Taco Soup

I call this Pantry Taco Soup as when I first made it, other than the meat, everything else I found in our pantry.

Pantry Taco Soup

  • 1 lb of ground beef or turkey
  • 2 packets of taco seasoning
  • 2 cans of beans (pinto, black, kidney, or what ever you like. I used kidney beans because that’s what we had)
  • 2 cans of corn
  • 2 cans of diced tomatoes


Brown and drain the ground meat.  Don’t drain the cans of beans, corn, and tomatoes. Empty the cans into the pot. And 1 can (use one of the cans you just emptied) of water. Add the packets of taco seasoning. Stir and bring to a boil. Simmer uncovered for 30 min.  Serve Fritos corn chips, sour cream and some grated cheese if desired.

Almond Joy Brownies

This recipie was given to my wife from her aunt. We were asked to try these out to see how they turned out. My wife loves these.

Almond Joy Brownies

  • 1 box of family size chocolate fudge brownie mix
  • 1 (14 oz) can of sweetened condensed milk
  • 1 (14 oz) bag of coconut
  • ¼ cup milk
  • 1 cup chocolate chips, melted
  • ¼ cup almonds (or other nuts), crushed

Preheat oven to 350º. Line a regular size (not the mini) cupcake pan with paper liners. The brownies will stick to the pan if you don’t.

Make brownies according to package directions and pour batter only half way up the liners.

Bake in oven for 12 min. While baking, mix the coconut, sweetened condensed milk, and milk together.

Remove the brownies from the oven and spoon on some of the coconut mixture.

Place in oven and continue to bake an additional 14-16 min.

Remove from the oven and allow to cool completely before removing the paper liners. Drizzle on the chocolate then sprinkle on the almonds.


 I made a variation in which I put a single maraschino cherry in the brownie before I spooned on the coconut mixture.  Also as you can see with the pictures, I didn’t bother removing the liners before I covered them in melted chocolate and nuts.


Peanut Butter Banana Muffins

Peanut Butter Banana Muffins

  • 1/3 cup peanut butter
  • 2/3 cup sugar
  • 2 eggs
  • 1 ¾ cup flour
  • 1 Tbsp baking powder
  • ½ tsp. salt
  • 3 mashed bananas

Stir peanut butter and sugar together. Add the rest of the ingredients.

60-70 min @ 350º for 2 loaves of bread
20 min @ 400º for muffins.

I sprinkeled some left over almond bits over some unbaked muffins for a variaiton. They were tasty!!



Cheesy Corn Dog Casserole

Cheesy Corn Dog Casserole

1 Box Jiffy Corn Muffin mix
1 package of 8 hotdogs
3 big handfuls of grated cheese


Preheat oven to 375°

Grease a 8”x8” pan. Slice 4 hotdogs and place into bottom of greased pan. Mix cornmeal as directed on box. Pour mixture onto sliced hotdogs and spread around to evenly cover the hotdogs. Slice the remaining 4 hotdogs and place on top of the cornmeal mixture. Evenly sprinkle the grated cheese on top to evenly cover.  Bake 20-25min.  Serve with ketchup and mustard if desired.








Introduction.

Hello, I'm Sam Maughan. The name of this blog is a fun play on my last name. For those of you who aren't familiar with it, Maughanster is pronounced Monster.

So I decided to start a blog to show some of the stuff I like to do and make. I like to creatively bake and cook, so I'll post the recipies of the creations I come up with. A lot of these are just twists on other recipies while some may be an idea I had.

I also like to paint models for a game I like to play. I already have a bunch of pictures on a flickr account. But I'll mostly put cooking stuff here.
